The words 'Our Favourite Slow Cooker Recipes for Summer' are bright and bold against a colourful, summery background below the Pinch of Nom logo.

If you’re only using your slow cooker for hearty stews in winter, you’ve not unlocked its full potential yet! When the sun’s out and the last thing you want to do is warm your kitchen with the oven, your slow cooker can be your best friend.

A fuss-free way to prepare delicious meals, you can whip up a full menu of flavour-packed meals using minimal energy.

From succulent, pulled meats to summery pasta dishes, there’s no shortage of inspiration on this list – and everything is lower in calories too!

Our upcoming cookbook, Pinch of Nom: Slow Cooker, is jam-packed with 100 brand-new healthy and delicious recipe ideas that are well worth the wait.

Slow Cooker Spiced Pulled Pork

We know how tiring it is to cook when it’s boiling hot outside! That’s why we usually leave our Slow Cooker Spiced Pulled Pork recipe to bubble away low and slow all day, until it’s mouthwateringly tender.

With the hard work done for you, all you have to worry about is deciding how to use it. Will you use the smoky-sweet pork pieces to fill tacos, burritos, wraps or salad bowls?

While it’s tasty enough to enjoy all on its own, we’ve taken things up a notch by prepping a lip-smacking sauce and a zingy side-slaw too.

Finished wraps filled with shredded pork, vibrant slaw, and a drizzle of spicy sauce, folded and ready to serve.

Slow Cooker Chilli Bowls

It might seem like a contradiction, but we love leaning on spicy foods when the sun’s shining. These Slow Cooker Chilli Bowls are a colourful, creative way to make use of leftover portions of chilli con carne.

We’ve not skipped any of the classic accompaniments, from a rice base to a cheesy topping (you can even add a spoonful of guacamole or sour cream, if you fancy!).

You might think there isn’t much rice in our recipe, but it’s just the right amount to leave you full and satisfied – especially on a hot summer’s evening.

Three plates are set on a tiled countertop. Each plate is filled with a crisp, golden tortilla wrap that has been baked into a bowl shape. Inside the tortilla bowls are fluffy white rice and rich brown chilli con carne, sprinkled with cheese.

Chicken Cacciatore

While Chicken Cacciatore translates to Hunter’s Chicken in Italian, it’s very different from the British pub grub version (you can go here to try our twist on that recipe, which is slow cooker friendly too!).

You might think this rich, tomatoey dish is only perfect for the warmer months, but it’s actually gorgeous year-round! Try it over a bed of pasta, or – for something lighter – serve it with a fresh, crispy mixed salad and scoop up the sauce with a crusty wholemeal bread roll.

Two servings of Pinch of Nom's Chicken Cacciatore are plated up on a red and white tabletop with forks to the side waiting to tuck in.

Slow Cooker Focaccia

You’ve not levelled up your summer picnics until you’ve baked a batch of Slow Cooker Focaccia. As you can see from our Gallery, our community absolutely loves this one!

Your slow cooker will work on the dough until it’s risen, fluffy and infused with a familiar combination of garlic, sea salt and rosemary.

The fresh, homemade focaccia is ideal for ripping apart and dipping, slicing ready for sandwiches or topping with cheese and roasted veg. Whatever works for you!

You’ll need to flick to pages 226-227 in our All in One cookbook to try the full recipe.

Slow Cooker Sweet Potato and Feta Risotto

It’s not summer without a cheesy, light risotto on the menu. This Slow Cooker Sweet Potato and Feta Risotto is also from our All in One cookbook, and you don’t have to worry about standing around for ages stirring it!

You’ll know it’s ready when your risotto rice is fluffed up, creamy, and bursting with salty, tangy feta cheese deliciousness – coupled with the natural potato sweetness!

Turn to pages 148-149 to freshen up your plate.

One Pot Mediterranean-Style Chicken Orzo

Yes, that’s right – you can make this hugely popular Pinch of Nom classic in your slow cooker. This is our quick slow cooker method for prepping One Pot Mediterranean-Style Chicken Orzo:

  • Brown the chicken, add to the pot with all of the other ingredients (except the orzo and parsley).
  • Cook on high for 2-3 hours.
  • Add the orzo and some extra stock, if required. Cook for a further 35-40 minutes on high until the orzo is tender.

Want to know how good orzo tastes in the sunshine? Try this recipe and thank us later!

Tandoori Chicken

If you love a Sunday lunch in the summer but you want to mix things up a bit, this Tandoori Chicken recipe is the way to go. It breaks away from a traditional roast in the most delicious way possible; with a medley of luscious, Indian-inspired spices.

Once your slow cooker has finished tenderising the chicken, carve and serve it with side dishes that are just as vibrant. Mildly spiced vegetables, zesty salads, biryani and samosas are all great sunny-day options!

Slow Cooker Kleftiko Lamb

You’ll feel like you’re on holiday in the Mediterranean with this Slow Cooker Kleftiko Lamb bubbling away in your kitchen. Not only does it look and taste exactly like something you’d expect to be served at a Greek taverna, it’s simple to make too.

Pop everything in the pot and leave it simmering on the ‘low’ setting all day (around 9-10 hours), until the meat is succulent and easy to shred with two forks.

Our top tip? Prep this batch-cook wonder on a Sunday, ready to serve in salads or sandwiches that’ll feed you for the rest of the week.

A table is set with a colourful plate of Pinch of Nom's slimming-friendly Kleftiko Lamb. The shredded lamb is served with a crispy, fresh side salad and a small bowl of sauce.

Slow Cooker Sweet and Sour Chicken

The flavours in this fakeaway-style Slow Cooker Sweet and Sour Chicken are just as bright and beautiful as a warm, sunny day! You can tell your dinner guests that it’s under 300 calories per portion if you want, but we can promise they won’t believe you.

Better yet, you can have it ready to go in just 6 easy-to-follow recipe steps! You’ll be left with a slow cooker full of tender chicken pieces and softened veggies in a thick, sticky-sweet sauce.

Pinch of Nom's slimming-friendly Sweet and Sour Chicken fakeaway is served at the centre of a table with chopsticks alongside, ready to dig in.

Slow Cooker Chana Masala

Turn to pages 44-45 in your copy of Enjoy for a slow cooker recipe that’s bursting with colour and flavour. At 225 calories per portion, this Slow Cooker Chana Masala is the perfect addition to a curry-inspired fakeaway night in the garden.

The key to this recipe is in the name: ‘chana’, or chickpeas, served in ‘masala’, the warming sauce.

After 6 hours of slow-cooking, it’ll be ready to serve at the centre of the table with wholemeal pitta breads for dipping.

3. Frozen Gut Health Smoothie Mix – 194 calories per serving

Frozen Gut Health Smoothie Mix featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (194 calories per serving).

We love it when we spot a product that’ll save us some time! This Frozen Gut Health Smoothie Mix is ideal for those busy days where you don’t fancy chopping fruits to blend.

Simply stash a bag in the freezer, ready to blitz into a gut-healthy smoothie – or use the chopped peach, mango, oats, chia seeds and yoghurt bites to prep a healthy dessert.

Frozen fruit is always cracking to have in the freezer for one of our sweet treat go-tos: Mango and Raspberry Ice Cream. The unbelievable thing about this recipe is the size of the ingredients list; you’ll only need bananas, frozen mango, frozen raspberries and granulated sweetener.

It truly is slimming-friendly and fresh at 87 calories per bowlful.

Three bowls are filled with colourful servings of Pinch of Nom's Mango and Raspberry Ice Cream. A spoon is in each bowl, waiting to tuck in. The bright-yellow mango scoop rests on top.

Frozen Gut Health Smoothie Mix are available from Aldi, priced at £1.99 per bag.

4. Sainsbury’s Breaded Chicken Steaks – 209 calories per steak

Sainsbury's Breaded Chicken Steaks featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (209 calories per steak).

We’re all in favour of breading chicken from scratch, but these Sainsbury’s Breaded Chicken Steaks are great for taking the stress away on busier days.

The breadcrumb coating around the tender chicken breast is mild, so it’ll pair nicely with a variety of different side dishes. You could always keep things simple with potato wedges, peas and gravy!

When we think about crunchy-coated chicken, our mind goes straight to Katsu. This Loaded Katsu Curry Fries pairs crisp chicken strips with fries, tortilla chips and our Katsu-style sauce whipped up from scratch.

A table is set with two plates of Pinch of Nom's slimming-friendly Loaded Fries with Katsu Curry Sauce.

Sainsbury’s Breaded Chicken Steaks are available from Sainsbury’s, priced at £1.69 per pack.

5. Spiced Potato, Chickpea and Mango Salad – 132 calories per 1/2 pot

Spiced Potato, Chickpea and Mango Salad featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (132 calories per 1/2 pot).

We really get that summertime feeling when we spot goodies like Spiced Potato, Chickpea and Mango Salad at the shops. The medley of chickpeas, potatoes and onion comes ready-drizzled in a sweet and spicy mango dressing, making it perfect for sunny day picnics and buffets.

Just like Aldi’s potato salad pot, our Chicken and Mango Burgers are sweet, tangy and fiery all at once. By preparing your salsa and burger patties from scratch, you can keep the calories down and control the spice level – be warned, our salsa is definitely on the hotter side!

We found that half of a deseeded red chilli is the perfect, taste bud tingling amount for our salsa bowl.

Chicken and Mango Burgers - Pinch of Nom Slimming Recipes

Spiced Potato, Chickpea and Mango Salad is available from Aldi, priced at £1.89 per pack.

6. LEON Golden Lentil Dhal – 201 calories per pack

LEON Golden Lentil Dhal featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (201 calories per pack).

LEON has always been one of our favourite ‘fast’ food options. This LEON Golden Lentil Dhal delivers on speed and flavour, with a pouch of curried chickpeas and lentils that’s ready to enjoy in 90 seconds.

Top your portion with some fresh coriander leaves and a scoop of relish – it makes something that’s already delicious even better.

We’re feeling inspired to reach for the lentils in our cupboard and make a batch of Sweet Potato and Red Lentil Soup that’ll serve us for the week.

Chuck all the ingredients together and let them bubble away, until your sweet potatoes are softened and they’ve released their naturally gorgeous earthiness.

A table is set with two eye-catching bowls of Pinch of Nom's slimming-friendly Sweet Potato and Red Lentil Soup, each bowl is topped with a sprinkling of cracked black pepper.

LEON Golden Lentil Dhal packs are available from Sainsbury’s, priced at £2.50 (or £2.00 with a Nectar card).

7. Morrisons The Best Tuscan Chicken – 228 calories per 1/2 pack

Morrisons The Best Tuscan Chicken featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (228 calories per 1/2 pack).

Is it bad that we picked up this Morrisons The Best Tuscan Chicken meal for two because it reminded us of our own recipe? If so, guilty!

The chicken breasts come ready-coated in a tangy, herby, Parmesan crumb – once they’ve crisped up, that’s your cue to drizzle them with the provided sachet of sun-dried tomato sauce. You really can’t argue with how easy that is…

It’s no exaggeration to say that our Tuscan Chicken Macaroni is one of our most-popular recipes EVER. Even though we’ve not scrimped on cheesiness, each portion works out at just 430 calories – not bad at all for a pasta dish!

If you’ve already tried this one, take a look at what to make next if you love Tuscan Chicken Macaroni

Tuscan Chicken Macaroni - Pinch of Nom Slimming Recipes

Morrisons The Best Tuscan Chicken is available from Morrisons, priced at £7.00 for a pack that serves 2.

8. trüfrü Pina Colada Pineapple in White Chocolate & Coconut – 87 calories per 1/7 pack

trüfrü Pina Colada Pineapple in White Chocolate & Coconut featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (87 calories per 1/7 pack).

We love how simple yet delicious these cocktail-inspired trüfrü Pina Colada Pineapple in White Chocolate & Coconut bite are. The pineapple chunks are wrapped in not one, but two, layers of silky chocolate.

After all that, they’re finished with a sprinkling of coconut to complete the tipple-like flavours. How fun does that sound for a light snack or dessert?

Speaking of fun, if you’ve not tried our Pina Colada Pancakes yet, you need to change that. They’re served with a sticky-sweet pineapple and lime topping and a dollop of creamy fat-free Greek yoghurt that’s too scrummy to resist.

A table is set for breakfast, with a pot of coffee and a mug nearby. On a white plate with a yellow rim, 3 Piña Colada Pancakes are served, with a topping of pineapples, a slice of lime and a dollop of Greek yoghurt. A knife and fork with bright blue handles are resting on the plate.

trüfrü Pina Colada Pineapple in White Chocolate & Coconut is available from Tesco, priced at £5.95 per bag.

9. Kellogg’s High Protein Bites Chocolate Cereal – 114 calories per serving

Kellogg's High Protein Bites Chocolate Cereal featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (114 calories per serving).

While not everyone’s a fan of hazelnut, we absolutely love it! These Kellogg’s High Protein Bites Chocolate Cereal bring a nutty-sweet crunch to the breakfast table.

As well as being fortified with the good vitamins and minerals we all need, they’re also higher in protein (listed as 21% plant-based protein). That means they should leave you feeling fuller for longer than your average cereal!

If you’re looking for a boost in the morning, nothing beats our Raspberry Mocha Granola Pots. As well as a hint of coffee to help you wake up, we’ve swirled in chocolatey yoghurt, juicy raspberries, reduced-fat cream and sticky-sweet maple syrup.

Two glasses of Pinch of Nom's Raspberry Mocha Granola pots are served, topped with a swirl of cream, raspberries and a drizzle Sweet Freedom Choc Shot. Extra granola waits to the side to be sprinkled on top.

Kellogg’s High Protein Bites Chocolate Cereal is available from Sainsbury’s, priced at £3.50 per box (or £2.85 with a Nectar card).

10. Heinz Fish and Chips Sauce – 36 calories per 10g serving

Heinz Fish and Chips Sauce featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (36 calories per 10g serving).

It’s no secret that we love playing with chippy-inspired flavours at Pinch of Nom, so we had to pick up Heinz’ brand-new Fish and Chips Sauce. A self-declared rival to tartare sauce, it’s a tantalisingly creamy combo of gherkins, parsley, and dill.

While it’s a no-brainer to serve it with fish, it also takes jacket potatoes, sarnies, wraps or salads to the next level.

If you’re wondering what we’d pair this tangy condiment with, it’s gotta be our Fish and Chip Fishcakes from pages 82-83 of our Air Fryer book. While our recipe includes a homemade tartare sauce, a squeezy bottle can be a life-saver when you’ve not had a chance to whip the dip!

A table is set with a plateful of Pinch of Nom's slimming-friendly Smoked Haddock and Spring Onion Fishcakes, with one fishcake served on a smaller pink plate. A pink fork is cutting into the fishcake, revealing the mashed potato centre. There is a lemon wedge to the side to squeeze on top, and a homemade dip in a small bowl.

Heinz Fish and Chips Sauce is available from Tesco, priced at £3.40 per s queasy bottle.

NEW Aldi Super 6 Fruit and Veg Selection

The fruit and veg selection from Aldi's Super 6, alongside their prices, featured in Pinch of Nom's Weekly Pinch of Shopping.

We love Aldi’s fortnightly selection of fresh fruit and veggies! They choose different items for a special offer where you can pick them up for much less than the normal price.

Here’s a rundown of the recipes we’d make with this week’s Super 6 offering.

Carrots – 41 calories per 100g

A bag of carrots never goes to waste in our kitchen – we’ll always find a tasty place to put them, from pies and stews to salads and even cakes.

Use them to make a bowl of hearty, nutritious goodness that’ll leave you set for the week with our Carrot and Coriander Soup recipe.

A table is set with two colourful bowls of Pinch of Nom's slimming-friendly Carrot and Coriander Soup. Both bowls are topped with air-fried strips of fresh carrot and a garnish of fresh coriander leaves.

Mango – 60 calories per 100g

Packed with magnesium and potassium, mangoes are famously good for digestion. While we wouldn’t recommend eating the skin, you can do so if you want to absorb every last nutrient!

Rain or shine, we’re always in the mood for Chicken and Mango Pickle Curry.

Pinch of Nom's Chicken and Mango Pickle Curry is served in a large round dish with red handles. The curry takes up one half of the dish, and fluffy white basmati rice is on the other side.

Mini Pears – 42 calories per 100g

Sweet, grainy and irresistibly juicy, don’t be fooled by the size of these mini pears. They’re gorgeous raw as a grab-and-go lunch box sized snack, or you can cook them into a variety of sweet recipes, like our comfort-loaded Pear and Ginger Crumble.

Four portions of Pinch of Nom's Pear and Ginger Crumble served in individual ramekin dishes on a yellow tabletop, with a jug of custard to the side waiting to pour over.

Apples – 53 calories per 100g

It’s always a good idea to keep an apple handy! They’re a juicy, crispy snack that’ll give your day a sweet boost for only 53 calories.

If you know us, you’ll know we always use a few slices to top our morning Apple Pie Porridge.

Pinch of Nom's Apple Pie Porridge served in three bowls on a yellow and white striped tabletop, with spoons waiting to dig in. Apple slices and flaked almonds are scattered on top.

Asparagus Tips – 25 calories per 100g

Bursting with nutrients and low in calories, asparagus has a subtle taste and can be cooked in a variety of ways – steam it, grill it or roast it to bring out its nutty notes.

Asparagus adds a gorgeous pop of green to our Creamy Garlic Prawns when we lay on a tapas-inspired spread.

Pinch of Nom's Creamy Garlic Prawns are served in a skillet while a large serving spoon scoops up a creamy portion.

Bananas – 89 calories per 100g

We’ve got no choice! We’ll have to use the Super 6 to stock up on bananas and make a stash of Banana and Peanut Muffins.

They’re pure snack-time heaven at only 53 calories per muffin.

Pinch of Nom's Banana and Peanut Muffins are served on a wire rack looking fluffy and golden – a cupcake case is empty where one has already been eaten!

The words '9 salt & pepper fakeaway ideas' are set against a bright orange speckled background, beneath the Pinch of Nom logo.

When you’re craving a salt and pepper takeaway, it’s easier than you might think to make a healthy alternative at home! From crispy chips to flavour-packed chicken, all 9 of these slimming-friendly salt and pepper fakeaway ideas will hit the spot.

With burgers, ribs and salads to scroll through, there’s something for every salt and pepper craving on this list. We’re talking about all the spice and crunch of your favourite dishes for far fewer calories than you’d expect.

Ready to fire up your wok or air fryer? Let’s tuck in!

This post contains affiliate links. Find out what this means.

Salt and Pepper Chicken

There’s no better recipe to kick off this list of salt and pepper fakeaways! Our version of Salt and Pepper Chicken brings all the famous flavours to the table, without lashings of oil or hidden nasties.

We’ve used a homemade spice blend and low-calorie cooking spray to keep things lighter. Remember, you can vary the spice as much as you like – just leave out some of the chilli if you prefer a milder dish.

A baking tray is filled with a freshly-baked batch of Pinch of Nom's Salt and Pepper Chicken fakeaway recipe.

Salt and Pepper Chicken Salad

Nothing has us looking forward to lunchtime as much as our Salt and Pepper Chicken Salad. Think about all the takeaway flavours you know and love, tossed into a fresh and crispy Asian-style salad bowl!

We like to use fresh and crispy shredded veggies, but there’s nothing to stop you swapping in your favourite greens (or adding some rice, if you fancy) – just be sure to adjust the calories if you’re keeping track.

Turn to pages 144-145 in your copy of Pinch of Nom: Express for the full recipe.

A table is set with Pinch of Nom's slimming-friendly Salt and Pepper Chicken Salad from the Express cookbook.

Salt and Pepper Chicken Nuggets

We honestly haven’t ordered Salt and Pepper Chicken Nuggets from a takeaway since we figured out how to make this healthier version! Toasting the sea salt in a dry pan is the key to achieving that authentic salt and pepper taste, so you don’t want to skip that step in the recipe.

Simply pop the breadcrumbed chicken chunks on a baking tray and your oven will turn them golden within 25-30 minutes.

We toss them together with colourful chopped green peppers, red peppers and chillies.

A street food style table is set with Pinch of Nom's Salt and Pepper Chicken Nuggets served on red and white striped paper, with dipping sauce to the side, and a wooden fork waiting to tuck in.

Salt and Pepper Chips

If you’ve always wondered how to make Salt and Pepper Chips at home (and make them healthier!), you’re in the right place. This is another one of those recipes that stopped us ordering from the Chinese takeaway as much!

It’s really easy to put the spice mix together with a short list of ingredients. Keep an eye out for Chinese 5-Spice next time you’re at the supermarket – it’s the key to getting the flavours right in salt and pepper fakeaways!

Will you crisp up your portion of chips in the oven or your air fryer?

A baking tray lined with greaseproof paper is filled with Pinch of Nom's Salt and Pepper Chips. The golden chips are mixed with finely diced red and green peppers and salt and pepper seasoning. A small pot of ketchup and a small pot of mayonnaise are served alongside the chips, and a hand holds one chip, dipping it into the ketchup.

Flava It! Air Fryer Salt and Pepper Chips

With just a sprinkle of our Flava It! Air Fryer Salt & Pepper seasoning, you can recreate fiery, Chinese-inspired deliciousness in no time.

Leave your air fryer to work its magic, and you’ll be tucking into golden, crunchy Salt and Pepper Chips that’ll give your local takeaway a run for its money.

That’s all the flavour you know and love, lower in fuss than ever!

Pinch of Nom's slimming-friendly Flava It! Salt and Pepper Chips are served in an air fryer basket, with a pink recipe mix sachet to one side.

Salt and Pepper Pork

A tasty break from chicken, this beautifully simple pork is one of our favourite salt and pepper fakeaways to serve over a bowl of rice and pak choi.

Once you’ve toasted your salt flakes and combined them with the rest of the spice mix ingredients, you’ll coat the pork evenly and leave it to marinate. The longer you leave it, the tastier it’ll be – we usually leave ours overnight!

Pinch of Nom's slimming-friendly Salt and Pepper Pork is plated up at the centre of a table with chopsticks ready to tuck in, and a separate side portion of rice and pak choi.

Salt and Pepper Ribs

There’s no rushing these mouthwatering Salt and Pepper Ribs, but the good news is they’re well worth the wait! Once they’re coated with a medley of store cupboard staples and diet coke (yes, really – diet coke!), you’ll leave them to oven-bake until tender and succulent.

Hours later, they’re pan-fried on a bed of vibrant veggies with dried chilli flakes and toasted sea salt before serving. One word: heavenly!

A white marble table is set with a large yellow plate of Pinch of Nom's Salt and Pepper Ribs. The ribs look juicy and golden, served with chopped peppers and onions, and garnished with a slice of fresh lime. Two smaller plates are also on the table, and a portion of ribs has been served onto each one.

Air Fryer Salt and Pepper Chicken Burgers

If you’re as obsessed with salt and pepper flavours as we are, you need to give these Air Fryer Salt and Pepper Chicken Burgers a try. Why choose between a Chinese-inspired dinner and a burger when you can have both?

Pile them high for 343 calories per portion – homemade Asian-style slaw included!

Don’t worry if you don’t have an air fryer at home, you can crisp up your Salt and Pepper Chicken Burgers in the oven too!

A dinner plate is resting on a chopping board, where two Salt and Pepper Chicken Burgers are being assembled. On toasted burger buns, panko breadcrumb coated chicken fillets are topped with green and red peppers, on a bed of Asian-style slaw.

Salt and Pepper Tofu

There’s no need to miss out on the salt and pepper fakeaway fun if you’re following a plant-based diet! Our Salt and Pepper Tofu is so flavourful and satisfying, you’d never miss the meat.

Our top tip? Drain and press your tofu between absorbent kitchen towels for at least 40 minutes. It’s worth the wait for that perfect springy texture!
