Hey Seraphie, once you’ve made the ice cream it can be kept in the freezer for up to 3 months in a freezer proof container so you can make it ahead and eat when ready, hope that helps!

Hi Hayley, lift your bananas out of the freezer a few minutes before you are ready to make the ice cream this will make it a lot easier to blitz them. If your mix isn’t coming together add a dash of water and this should help!

Hi Charlie,
Bananas are are one of the main ingredients in this recipe and are important to it’s success. This is because of their texture and natural sweetness. When they’re frozen and then blitzed in a food processor they become creamy and smooth and closely resemble the texture of ice cream. This would be difficult to achieve without the banana in this recipe.
There is an ice cream recipe in our second book, ‘Everyday Light’ that you may like, it’s called Raspberry and Elderflower Swirl and doesn’t have bananas in it. Do hope this helps.
