I tend to freeze extra portions of the recipes so that I have meals ready prepared in my freezer and just get them out the night before which really helps me.

The book I have is like my bible at the moment and love it .At the moment I have the time to work it out for 1 but when go back to work full time, coming home I would want to just look at the book without needing to work out if that makes sense …

Yes, you could but you might need to adjust the cooking times and temperatures to make sure the pastry and sausage are cooked at the same time. We’ve never tried it ourselves, so it would be a case of trial and error I’m afraid.
