I’m a muffin baking fan, but we are now on a diet health kick and my usual muffin was excessive. This muffin was ideal and I enjoyed making them, it was my first attempt with coconut flour too.

I have made these more times than I can remember. I tried something different, I used Apple and Cinnamon porridge, with microwaved diced eating apple, Wow they taste just like Apple Cake!

To anyone just picking this link up the quaker oats are available in sainsburys and ocado (prob in other super markets too) bit the super fruits are only blueberry and guava! I’m assuming you can use the original instead. You can also get the coconut flour from sainsburys 🙂
