Defrosted in the fridge so I could “dump” into two dishes / trays and oven cook as per recipe! Perfect low effort mid week meal that way!

No aubergine so used courgette and mushrooms as well as peppers carrots and onions. Really tasty. Served with spicy rice. Delicious with savoury rice.
