Made this today for our lunch. Hubby as always the skeptic! “Carrot soup?? No thanks” I said you’re having it as I’m making it! As I cannot have onions, leeks etc. I added some fresh root ginger, ok I could have used half the amount as it was a little bit too “warm” But guess what? Hubby loved it. Added lactose free cream cheese, unfortunately not low fat, but dividend over several portions not too bad come extra calories. Will definitely make it again and still add a bit of ginger. Recommended!

So easy to make! I left the skins on veggies for extra goodness! Plus a cheeky extra tbsp of mild curry powder! Will also top with some sunflower seeds for an iron boost!
