Heat over a medium heat until it just starts to steam. Do not let it burn the bottom of the pan or come to the boil. Mix 2 egg yolks, 1 tbsp cornflour and 3 tbsp granulated sweetener in a heatproof jug to form a smooth paste. Pour the hot milk into the jug and quickly stir together. Pout the mixture back into the pan and cook very slowly, stirring continuously, for 5-10 minutes until which and starting to bubble. Leave to stand for 1 minute before serving.

Was unsure of this dessert as I’m not a great fan of almonds but my husband is and persuaded me to make it. So glad I did.
