Hi Susan, it would probably be best to assemble these Cheese Palmiers and bake them before freezing. Then defrost thoroughly before reheating. If you freeze them before baking you may find they don’t hold their shape well. Thanks for your question and hope this helps.

It was quite warm so I did have to chill the pastry a couple of times. Well worth it, these are devine!

I ended up refrigerating between rolling each edge.
