I have cooked this many times as it’s a quick flavoursome dinner. I’ve used dried herbs as well as fresh and would say fresh is far better. I’ve also used low fat salad cheese instead of feta and works equally as well.

I love making this. If you add king prawns you have a great Prawn Saganaki. You could also try a 2 tbsp of Ouzo for a great aniseed flavour but remember that it will add to the calories
