Ingredients

For the pulled pork

  • 1 kg pork joint any visible fat removed
  • 1 tsp Chinese 5-spice
  • 1 tsp salt
  • 750 ml boiling water
  • 2 chicken stock cubes
  • 150 ml dark soy sauce
  • ½ tsp chilli flakes
  • 1 tbsp rice vinegar
  • ½ orange zest only
  • 1 tsp Sriracha
  • 3 tbsp granulated sweetener
  • 4 spring onions cut into 5cm (2 inch) pieces
  • 1 head garlic gloves peeled and cut in half
  • 2 cm piece fresh ginger no need to peel (cut into thin slices)
  • 6 soft tortilla wraps (33g per wrap)

For the spicy sauce

  • 5 tbsp quark
  • 1 tbsp rice vinegar
  • 1 tsp Sriracha
  • 1 tsp water depending on how thin you want the sauce

For the slaw

  • ¼ red cabbage shredded
  • 3 carrots peeled and julienned
  • 1 lime juice only
  • 1 tbsp rice vinegar
  • 1 tsp Sriracha
  • 1 tsp fish sauce (optional)

Instructions

  • Preheat the oven to 160°C.

To make the pork

  • Rub the pork all over with the Chinese 5-spice and salt.
  • To the water, add the chicken stock cubes, soy sauce, chilli flakes, rice vinegar, orange zest, Sriracha and sweetener and stir until dissolved.
  • Add the spring onions, garlic and ginger. Place the pork into the casserole dish and submerge in the cooking liquid.
  • Cover with a lid and cook for 2-4 hours. Until the meat is very tender.
  • Remove the pork and shred with two forks. Pour the sauce through a fat separator and and transfer the sauce to a saucepan and set on a medium heat. Simmer until reduced by half. Pour over the shredded pork and toss to coat.

To make the spicy sauce

  • Add all the sauce ingredients to a small bowl and mix until smooth.

To make the slaw

  • Place the shredded cabbage and carrots in a bowl. Pour over the lime juice, rice vinegar, Sriracha and fish sauce and mix well.
  • Place a little of the pork mixture onto each wrap, add some slaw and a drizzle of spicy sauce. Fold in half and serve!

Pork Parmigiana | Slimming & Weight Watchers Friendly

We’ve rolled fat-trimmed pork steaks into thinner escalopes and coated them in a lip-smacking Parmesan and lemon crust that you can have prepared and ready to bake in no time. Ingredients

  • 500 g passata
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 1 tsp dried oregano
  • ½-1 tsp granulated sweetener (or sugar)
  • salt and freshly ground black pepper
  • 4 100g pork loin steaks trimmed of fat
  • zest of 1 lemon finely grated
  • 1 tsp dried parsley
  • 15 g Parmesan cheese finely grated
  • 30 g panko breadcrumbs
  • 1 tbsp cornflour
  • 1 medium egg beaten
  • 125 g reduced-fat mozzarella sliced
  • low-calorie cooking spray

Instructions

  • Place the passata, garlic granules, onion granules, and oregano into a saucepan. Bring to the boil, then reduce the heat and simmer for 30 minutes, while you prepare the pork steaks. Stir occasionally to make sure it doesn't catch.
  • Preheat the oven to 180°C fan. Line a baking sheet with non-stick baking parchment.
  • Using a rolling pin or a meat mallet, lightly bash the pork steaks, to a ½cm thick escalope.
  • Mix the lemon zest, parsley, Parmesan, and panko together on a plate, and beat the egg on another plate.
  • Dust the pork with the cornflour, then dip into the egg, then into the panko mix, to coat lightly. Place onto the prepared baking tray and repeat with the remaining pork.
  • Spray the tops of the pork with low-calorie cooking spray and place in the centre of the oven for 20 minutes, or until the pork is cooked and the breadcrumbs are crisp.
  • Taste the sauce and add sweetener and salt and pepper, if required.
  • Spoon the sauce on top of the pork, then top with the sliced mozzarella. Return to the oven for 5 minutes, or until the mozzarella is melted and bubbling. Serve!

There’s no resisting the gooey layer of mozzarella cheese on top of our Air Fryer Pork Parmigiana recipe! While you can bake them in the oven if you want to, we love that you can have the Parmesan and lemon crust coating crisped to perfection even faster with the help of your air fryer.   • Spoon the sauce on top of the pork, then top with the sliced mozzarella. Continue cooking for 3-4 minutes, or until the mozzarella is melted and bubbling. Serve!

Ingredients

  • 8 pork medallions
  • low-calorie cooking spray

For the Marinade

  • 3 tsp soy sauce
  • 1 tbsp hoisin
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp oyster sauce
  • 2 cm ginger peeled and finely grated
  • 2 cloves garlic peeled and crushed
  • 1/2 tsp sriracha
  • 1 tsp onion granules
  • 1 tsp Chinese 5-spice
  • 1/2 tsp tomato purée

Instructions

  • Mix all the marinade ingredients in a large bowl. Remove 2 or 3 tablespoons of the marinade and set aside for basting the pork during cooking.
  • Add the pork to the bowl and coat it well with the marinade.
  • Cover the bowl and refrigerate for 30 minutes to marinate.
  • Preheat the oven to 180°C.
  • Spray a baking tray with low-calorie cooking spray, place the pork on it and cook for 20 minutes – making sure to baste at the 10 minute mark.
  • Depending on the thickness of your pork, it may need a little longer. Make sure the pork is cooked through before serving. Serve with your favourite BBQ side dishes.

Tip: You can prepare and marinate the pork overnight if you have time to intensify the flavour.
Alternatively you can cook these on the BBQ:
Spray both sides of the pork with low-calorie cooking spray and cook on a hot BBQ for 2 minutes on each side. Turn down to a medium heat (or move the pork to a slightly cooler part of the grill).
Cook for 5 or 6 minutes on each side (basting with the reserved sauce halfway through cooking each side) or until the internal temperature reaches 75°C (170 °F).
