Frozen Pickle Martini | Slimming & Weight Watchers Friendly

  • 3 tbsp gin
  • 1 tbsp dry vermouth
  • 2 tbsp pickle juice from the jar
  • 100 g ice cubes

Instructions

  • Place the gin, vermouth, pickle juice and ice into a high speed blender and blitz for a few seconds, until the ice is crushed.
  • Pour into a martini glass, and garnish with the baby gherkins.

Ingredients

For the mince

  • low-calorie cooking spray
  • 250 g 5% beef mince
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp dried oregano
  • ½ tsp garlic granules
  • ½ tsp onion powder
  • 1 tsp Henderson's relish
  • salt and pepper to taste

For the salad

  • 2 smoked bacon medallions sliced
  • ½ red onion peeled and sliced
  • 1 iceberg lettuce approx. 500g, stalk removed and sliced
  • 80 g cucumber sliced
  • 8 cherry plum tomatoes sliced
  • 60 g sliced pickled gherkins
  • 80 g sweetcorn drained
  • 2 tbsp light mayonnaise
  • 2 tsp reduced-sugar ketchup
  • 2 tbsp vinegar from gherkins
  • ¼ tsp mustard powder
  • ¼ tsp garlic granules
  • ¼ tsp white granulated sweetener
  • 20 g reduced-fat Cheddar cheese finely grated
  • salt and pepper to taste

Instructions

  • Spray a medium frying pan with low-calorie cooking spray and place over a medium heat.
  • Add the beef mince, paprika, cumin, oregano, garlic granules, onion powder and Henderson's relish. Fry for 8-10 minutes until the juices have evaporated and the beef is cooked through. Season to taste with salt and pepper.
  • While the mince is cooking, spray another frying pan, add the onion and bacon and fry for 4-6 minutes until onion is soft and bacon cooked and crispy.
  • On your serving plates or bowls, layer up the lettuce, cucumber, tomatoes, sweetcorn and gherkins. To a small bowl add the mayonnaise, ketchup, gherkin pickle vinegar, mustard powder, garlic granules and sweetener and mix until smooth. Season to taste with salt and pepper.
  • Top the lettuce with the cooked beef mince, onion and bacon. Sprinkle over the cheese and finish with a drizzle of burger sauce dressing.

Ingredients

For the slaw

  • ½ carrot peeled and julienne (approx. 40g)
  • 50 g sprouts finely sliced
  • 2 spring onions finely sliced
  • ½ lime juiced
  • 1 tbsp rice vinegar
  • 1 tsp white granulated sweetener
  • salt and pepper to taste

For the sandwich

  • 4 slices bread approx. 32g per slice
  • 100 g roast turkey breast sliced
  • 2 pigs in blankets sliced in half lengthways
  • 1 tbsp light mayonnaise
  • ¼ tsp sriracha
  • 1 tbsp cranberry sauce
  • 40 g lettuce sliced

Instructions

  • In a bowl combine the carrot, sprouts and spring onion. Add the lime juice, rice vinegar, sweetener and season with salt and pepper. Leave to one side.
  • Toast the bread until lightly golden. In a small bowl combine the mayonnaise and sriracha.
  • Spread the mayonnaise onto 2 slices of bread and cranberry sauce onto the other two slices of bread.
  • Starting with mayonnaise side up add the lettuce, the turkey, pigs in blankets and finish with the slaw. Top with the other slice of bread cranberry sauce side down.

Tip 1: If you have no leftover turkey roast a turkey breast fillet, cook at 170°C for 20-25 minutes.

Tip 2: If you have no leftover pigs in blankets use 2 reduced-fat sausages and 2 bacon medallions. Wrap the bacon round each sausage and cook at 190°C for 20-25 minutes.

Ingredients

  • 350 g potato peeled and diced
  • 1 medium carrot peeled and diced
  • 50 g broccoli cut into florets
  • 80 g Brussels sprouts sliced in half
  • 20 g diced cranberries
  • 20 g panko breadcrumbs
  • 15 g Parmesan cheese finely grated
  • ½ tsp garlic granules
  • ½ tsp onion granules
  • ¼ tsp mustard powder
  • salt and pepper to taste

For the coating

  • 50 g panko breadcrumbs
  • 1 medium egg beaten
  • low-calorie cooking spray

Instructions

  • Add the potato, carrot, broccoli and sprouts to a saucepan. Cover with cold water and set on a medium heat, bring to the boil then lower the heat and simmer for 8-10 minutes until the vegetables are soft and mashable.
  • Drain well and add to a bowl. Using a potato masher, mash the vegetables into a chunky mash. The vegetables should still be chunky and not too smooth. Add the cranberries, panko, Parmesan, garlic and onion granules and mustard powder. Mix well and season with salt and pepper to taste. Leave to cool.
  • When the mixture has cooled enough to handle, form into 18 small croquette shapes. Add the beaten egg to a bowl and the breadcrumbs to a second bowl. Dip each croquette into the egg then into the breadcrumbs making sure to coat on all sides.
  • Once coated, place into your air fryer basket and spray with low calorie cooking spray. Cook at 180°C for 10-15 minutes, turning hallway through until golden brown. You may need to do this in batches. Serve 3 croquettes per person with a side of cranberry sauce or glug of gravy.

Ingredients

For the salmon

  • 2 salmon fillets approx. 120g each, skinless and boneless
  • 1 tbsp green pesto
  • 1 tbsp lemon juice
  • ¼ tsp garlic granules
  • salt and pepper to taste
  • low-calorie cooking spray

For the salad

  • 80 g lettuce sliced
  • 6 cherry tomatoes quartered
  • 4 radishes sliced
  • 11 pine nuts

For the dressing

  • 1 tbsp green pesto
  • 1 tbsp lemon juice
  • 1 tbsp reduced-fat cream cheese

Instructions

  • In a small bowl, combine the pesto, lemon juice, garlic and season with a little salt and pepper.
  • Add the salmon to a bowl and pour over the marinade. Coat the salmon, cover and pop into the fridge for 30 minutes.
  • Add the pine nuts to a small frying pan and set on a low heat. Heat for 2 minutes until the pine nuts are lightly toasted and golden. Leave to one side.
  • Assemble the salad. Divide the lettuce, tomatoes and radish between two plates. In a small bowl, combine the pesto, lemon juice and cream cheese, and stir to combine.
  • Once the salmon has marinated, spray a frying pan with low-calorie cooking spray. Set on a medium heat. Cook the salmon for 4 minutes on each side. It should be just turning crispy on the surface.
  • Add the salmon to the top of the salad, drizzle over the dressing and sprinkle with the pine nuts. Serve!
