Roasted Sweet Potato Salad | Slimming & Weight Watchers Friendly (Copy)

For this Sweet Potato Salad recipe, we’ve coated sweet potato, chickpeas, red onion, and red pepper in a blend of spices — then roasted everything in the oven for a soft, slightly caramelised texture.

Ingredients

  • 300 g sweet potato peeled and chopped into chunks
  • 120 g chickpeas rinsed and drained
  • low-calorie cooking spray
  • 2 tsp sweet smoked paprika
  • 2 tsp garlic granules
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/4 tsp mild chilli powder
  • 1 red onion peeled and chopped into chunks
  • 1/2 red pepper deseeded and chopped into chunks
  • 120 g rocket
  • 1 avocado skin and stone removed, sliced

For the dip

  • 40 g reduced fat feta cheese
  • 3 tbsp fat-free Greek yoghurt
  • 1 lime juiced
  • 1/4 tsp Dijon mustard
  • 1/4 tsp garlic granules
  • salt and pepper to taste

Instructions

  • Add the chickpeas and sweet potato to a mixing bowl. Spray with low-calorie cooking spray – then sprinkle over the paprika, garlic, cumin, coriander, and chilli powder. Toss everything together to coat.
  • Tip the sweet potato and chickpeas onto a large baking tray, and add the onion and pepper. Cook for 40 minutes, turning halfway through. You'll know the vegetables are ready to come out when they're softened and slightly brown around the edges.
     
  • Add the feta, yoghurt, lime juice, mustard, and garlic granules to your food processor. Blitz everything until smooth, then season with salt and pepper to taste.
     
  • When you're ready to serve, lay out a bed of rocket on your plates — then top with the sweet potato, chickpeas, pepper, and onion. Add the avocado, then finish off by drizzling over the feta dressing.

Cherry Choc Chip Ice Cream | Slimming & Weight Watchers Friendly

This one’s for the sweet-toothed summer dreamers! You won’t believe this Cherry Choc Chip Ice Cream is made without a drop of cream! It’s that thick, smooth and creamy. We’ve blitzed frozen bananas into a luscious ice cream base and folded through juicy cherries and dark chocolate chunks. It’s a no-churn, fuss-free recipe that tastes just as indulgent as the real deal.

Ingredients

  • 300 g frozen cherries
  • 2 medium very ripe bananas approx 100g each peeled and thinly sliced
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 15 g small dark chocolate chunks or chocolate chips

Instructions

  • Line a baking tray with a sheet of non-stick baking paper. Place the sliced bananas on the lined baking tray in a single layer. Place in the freezer for 2 1/2 - 3 hours until frozen.
  • When you're ready to make the ice cream, remove the bananas from the freezer and leave to soften a little for 5 minutes.
  • Place the bananas, frozen cherries, lemon juice and vanilla extract in a food processor or blender and blitz for a minute or two until thick, smooth and creamy. You will need to scrape the mixture down from the side of your food processor occasionally. You may need to do this in two batches depending on the size of your food processor or blender.
  • Working quickly, scrape the mixture into a medium mixing bowl using a spatula. Fold in the chocolate chunks and scrape into a 1 L freezer-proof container. Roughly spread out, cover with a lid and place in the freezer for about 4 hours until frozen.
  • When ready to serve, remove from the freezer and leave to soften for about 10 minutes before serving.

Notes

Tip: Use very ripe bananas as they are naturally sweet and will give the ice cream a good flavour. This is a good way to use up any over ripe spotty bananas you may have.
Tip: It's worth using a good quality dark chocolate, we used small chocolate chunks with 70% cocoa solids.
Tip: If you're making this on a hot day, you can chill your mixing bowl in the fridge for a few minutes to help prevent the ice cream from melting while you fold in the chocolate. Aim to work quickly!

Ingredients

  • 1 kg chicken breast cut into 2½ cm (1 inch chunks)
  • 3 tbsp soy sauce
  • 1 tbsp Henderson's relish or Worcestershire Sauce
  • 1 tbsp lemon juice or lime juice
  • 100 ml sugar-free lemon lime pop like 7up Free or Sprite Zero
  • 4 garlic cloves peeled and minced
  • 3 tbsp tomato purée
  • 2 tsp granulated sweetener
  • ½ tsp ground ginger

Instructions

  • If using bamboo skewers, pop them in some water to soak.
  • Add all the ingredients to a large bowl and mix well so that the chicken is well coated. Cover the bowl and place in the fridge to marinate for 4-6 hours (or overnight is even better!).
  • Once the chicken is ready, thread it onto the skewers. We find using 8 skewers works well, so you have 2 skewers per person – you can do more small skewers if you prefer.
  • Place onto a hot barbecue for around 25-30 minutes, until the chicken has cooked through.
    If you want to cook these in the oven, place onto a foil lined baking tray. Place into an oven preheated to 180°C for 30 minutes, until cooked through.
  • Once cooked, serve with your choice of accompaniment.

Ingredients

  • 4 tsp mango chutney

Instructions

  • Spray a frying pan with low-calorie cooking spray and set on a low-medium heat.
  • Add the onion and pepper and fry for 5 minutes until softening.
  • Add the garlic and continue to fry for 3 minutes, add the spinach and cook for a minute until just wilted.
  • While the vegetables are cooking, prepare the eggs. Add to a jug with the water, garam masala, cumin, coriander, chilli powder, paprika, turmeric and season with salt and pepper. Whisk using a fork until combined.
  • Spray the pan with a little more low-calorie cooking spray and pour in the egg. Cook for 8-10 minutes until setting round the edges but still liquid on top. Preheat the grill.
  • Add spoonfuls of the mango chutney swirling lightly.
  • Pop under the preheated grill for 4-5 minutes until the frittata is set and turning golden brown on top. Serve!

Tip: We used mild chilli powder in the recipe. You can swap for a hotter chilli powder or add less to suit your taste.

Instructions

  • Preheat the oven to 190°C and spray the tray with low-calorie cooking spray.
  • Add the chicken, onion and pepper to the tray.
  • In a bowl combine the passata, chipotle paste, tomato purée, sweetener, paprika, garlic and onion granules. Mix until smooth.
  • Pour over the chicken and vegetables and toss to coat. Cook for 25 minutes.
  • Sprinkle over the rice pouches and stir, return to the oven for 10 minutes, remove and serve.
