Boxing Day Sandwich | Slimming & Weight Watchers Friendly

It's not Boxing Day until you've made the most of your Christmas dinner leftovers! This recipe invites all of the best bits to the party – sliced turkey, pigs in blankets, stray veggies – and piles them high with a zingy, refreshing carrot and sprout slaw that's ready in minutes. Ingredients

For the slaw

  • ½ carrot peeled and julienne (approx. 40g)
  • 50 g sprouts finely sliced
  • 2 spring onions finely sliced
  • ½ lime juiced
  • 1 tbsp rice vinegar
  • 1 tsp white granulated sweetener
  • salt and pepper to taste

For the sandwich

  • 4 slices bread approx. 32g per slice
  • 100 g roast turkey breast sliced
  • 2 pigs in blankets sliced in half lengthways
  • 1 tbsp light mayonnaise
  • ¼ tsp sriracha
  • 1 tbsp cranberry sauce
  • 40 g lettuce sliced

Instructions

  • In a bowl combine the carrot, sprouts and spring onion. Add the lime juice, rice vinegar, sweetener and season with salt and pepper. Leave to one side.
  • Toast the bread until lightly golden. In a small bowl combine the mayonnaise and sriracha.
  • Spread the mayonnaise onto 2 slices of bread and cranberry sauce onto the other two slices of bread.
  • Starting with mayonnaise side up add the lettuce, the turkey, pigs in blankets and finish with the slaw. Top with the other slice of bread cranberry sauce side down.

Tip 1: If you have no leftover turkey roast a turkey breast fillet, cook at 170°C for 20-25 minutes.

Tip 2: If you have no leftover pigs in blankets use 2 reduced-fat sausages and 2 bacon medallions. Wrap the bacon round each sausage and cook at 190°C for 20-25 minutes.

Ingredients

  • 40 g dried cranberries
  • 1 orange, zest and juice
  • 150 g self-raising flour
  • 50 g oats
  • 65 g white granulated sweetener
  • 75 g reduced-fat spread
  • ¼ tsp ground cinnamon
  • 3 Bramley apples
  • 2 pears

Instructions

  • Preheat the oven to 160°C.
  • In a small bowl combine the dried cranberries with the orange juice and leave to one side while you prepare the rest of the crumble.
  • Reserve 1 tbsp of sweetener and add the rest to a mixing bowl with the flour and oats. Add the reduced-fat spread and rub into the flour between your fingertips until it looks like breadcrumbs.
  • Peel the apples and remove the core. Cut into slices about the width of a £1 coin. Do the same with the pears. Add to an ovenproof dish. Pour in the orange juice and cranberries and sprinkle over the orange zest, reserved sweetener and cinnamon. Stir and spread out evenly in the dish.
  • Top the fruit with the crumble mixture and roughly flatten out the surface. Pop into the oven for 35-40 minutes until the fruit is soft and the crumble has turned golden brown.

Ingredients

  • 320 g ready-rolled light puff pastry
  • 2 tbsp cranberry sauce
  • 4 cooked bacon medallions finely chopped
  • 100 g brie rind removed
  • 2 tbsp skimmed milk

Instructions

  • Preheat your oven to 200°C fan. Line a baking sheet with baking parchment.
  • Unroll your pastry sheet and lay in front of you with the longest side facing you. You can leave it on the greaseproof paper packaging to aid rolling.
  • Spread the cranberry sauce over the pastry sheet, up to the edges, leaving a 1cm gap along the longer top edge.
  • Sprinkle the bacon pieces evenly over the cranberry sauce, and then tear the brie into small chunks and dot over the bacon.
  • Use the pastry brush to moisten the 1cm gap with milk. Taking the closest, long edge to you, begin to roll up. Keep rolling until you have a ‘Swiss roll’ shape. With the seam-side down, cut into 16 equal shaped, spiral slices.
  • Arrange the slices onto the lined baking sheet, leave a small gap between each to allow them to puff up.
  • Brush the tops with a little milk then place in the middle of the oven for 15-20 minutes, until risen, crisp and golden brown. Serve.

Ingredients

  • 200 g self-raising flour
  • 1 tsp baking powder
  • 100 g dried cranberries
  • 3 tbsp granulated sweetener or sugar
  • 1 tsp ground mixed spice
  • 1 medium egg
  • 75 g reduced-fat spread melted
  • juice of 1 large orange
  • zest of 1 orange finely grated
  • 125 g fat-free Greek yoghurt
  • ½ tsp mixed spice
  • 1 tsp granulated sweetener

Instructions

  • Preheat the oven to 180°C fan. Line a 12-hole muffin tray with cupcake cases.
  • Mix the flour, baking powder, cranberries, sweetener, and mixed spice together in a large bowl.
  • Beat the egg, melted spread, orange juice, orange zest and yoghurt together in a separate bowl.
  • Make a well in the centre of the dry ingredients, and pour in the liquid. Mix lightly until combined. Don't over mix or your muffins will be tough.
  • Spoon the mixture equally, between the cupcake cases.
  • Mix the mixed spice and granulated sweetener together and sprinkle over the top of the muffins.
  • Pop in the oven and bake for 15 minutes, until the muffins are risen and springy, and a skewer inserted into the middle comes out clean.
  • Allow to cool, then serve. These will keep for 3-4 days in an airtight tin.

Ingredients

  • 800 g potatoes, cut into 1cm fries. No need to peel, but you can if you prefer
  • low-calorie cooking spray
  • salt and freshly ground black pepper
  • 1 onion, peeled and sliced
  • 4 bacon medallions, sliced
  • 200 g cooked turkey, diced
  • 125 g brie, torn into small pieces
  • 50 g cranberry sauce
  • handful of fresh sage leaves, roughly chopped

Instructions

  • Preheat the oven to 200°C fan. Spray a baking sheet with low-calorie cooking spray.
  • Rinse the potatoes in cold water and pat dry. Scatter evenly over the baking sheet and spray well with low-calorie cooking spray. Season with salt and pepper. Place in the oven and cook for around 35 minutes, shaking the tray halfway through to ensure even cooking. The fries should be golden brown and soft in the middle.
  • While the fries cook, spray a frying pan with low-calorie cooking spray and fry the bacon and onions until cooked through.
  • When the fries are cooked, top with the bacon, onions and the diced turkey. Dot over the brie pieces and add small spoonfuls of the cranberry sauce. Sprinkle over half the sage.
  • Return to the oven for 5-10 minutes until the turkey is piping hot and the brie is melted.
  • Sprinkle over the remaining sage and serve.

Ingredients

  • 4 reduced-fat pork sausages approx. 228g
  • fresh sage finely chopped
  • 8 g dried cranberries finely chopped
  • ½ tsp garlic granules
  • ½ tsp onion granules
  • ¼ tsp dried thyme
  • 6 chicken thighs, skinless and boneless approx. 600g
  • 6 bacon medallions
  • 2 tbsp cranberry sauce

Instructions

  • Preheat the oven to 180°C and line a baking tray with non-stick baking parchment.
  • Squeeze the sausage meat into a mixing bowl, discarding the casings. Add the sage, cranberries, garlic granules, onion granules and thyme. Mix together (we find it's easier to use your hands so that you can get everything evenly mixed).
  • Lay the chicken thighs out flat and spread with an even layer of the sausage mixture. Roll up each chicken thigh tightly, and then secure with a cocktail stick or skewer to seal in the filling.
  • Place each rolled chicken thigh onto the lined baking tray and, using half the cranberry sauce, brush the top of each. Lay a bacon medallion on top of each chicken thigh.
  • Place into the oven for 30 minutes. Remove from the oven and brush the remaining cranberry sauce on top of each slice of bacon. Return to the oven for a further 5-10 minutes, until the chicken and sausage are cooked through and the outside is turning golden brown. Remove the cocktail stick before serving.
