Cheeseburger Chopped Salad | Slimming & Weight Watchers Friendly

Ingredients

For the mince

  • low-calorie cooking spray
  • 250 g 5% beef mince
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp dried oregano
  • ½ tsp garlic granules
  • ½ tsp onion powder
  • 1 tsp Henderson's relish
  • salt and pepper to taste

For the salad

  • 2 smoked bacon medallions sliced
  • ½ red onion peeled and sliced
  • 1 iceberg lettuce approx. 500g, stalk removed and sliced
  • 80 g cucumber sliced
  • 8 cherry plum tomatoes sliced
  • 60 g sliced pickled gherkins
  • 80 g sweetcorn drained
  • 2 tbsp light mayonnaise
  • 2 tsp reduced-sugar ketchup
  • 2 tbsp vinegar from gherkins
  • ¼ tsp mustard powder
  • ¼ tsp garlic granules
  • ¼ tsp white granulated sweetener
  • 20 g reduced-fat Cheddar cheese finely grated
  • salt and pepper to taste

Instructions

  • Spray a medium frying pan with low-calorie cooking spray and place over a medium heat.
  • Add the beef mince, paprika, cumin, oregano, garlic granules, onion powder and Henderson's relish. Fry for 8-10 minutes until the juices have evaporated and the beef is cooked through. Season to taste with salt and pepper.
  • While the mince is cooking, spray another frying pan, add the onion and bacon and fry for 4-6 minutes until onion is soft and bacon cooked and crispy.
  • On your serving plates or bowls, layer up the lettuce, cucumber, tomatoes, sweetcorn and gherkins. To a small bowl add the mayonnaise, ketchup, gherkin pickle vinegar, mustard powder, garlic granules and sweetener and mix until smooth. Season to taste with salt and pepper.
  • Top the lettuce with the cooked beef mince, onion and bacon. Sprinkle over the cheese and finish with a drizzle of burger sauce dressing.

Ingredients

  • 200 g rice
  • 400 g lean minced beef
  • 4 bacon medallions, diced
  • ½ red pepper, diced

Instructions

  • Cook the rice according to the packet instructions, then set aside.
  • Spray a frying pan with low-calorie cooking spray, then cook the mince, onions and bacon until brown. Add in the peppers, carrots and mushrooms.
  • Sprinkle the contents of this sachet into the pan, then add 200ml water. Give everything a good mix and cook until the veggies have softened.
  • Stir in the cooked rice and spring onion, dish it up and enjoy!

  • Place in the air fryer. For both burgers and kebabs, we suggest air-frying for 10-15 minutes at 200°C or until cooked thoroughly.

Ingredients

For the naan pie tops

  • 60 g white self-raising flour
  • ¼ tsp caster sugar
  • small pinch of salt
  • ¼ tsp baking powder
  • 60 g fat-free natural yoghurt
  • 1 tsp skimmed milk, for glazing
  • pinch of sesame seeds, to sprinkle on top

For the keema filling

  • 400 g 5% fat minced beef
  • 1 medium onion, peeled and finely chopped
  • 1 red pepper, deseeded and finely diced
  • 1 green pepper, deseeded and finely diced
  • 2 medium carrots, peeled and finely diced
  • 1 cm root ginger, peeled and grated
  • 2 tsp garlic granules
  • 2 tbsp mild curry powder
  • 3 tbsp tomato puree
  • 450 ml beef stock, 2 beef stock cubes made up with 450ml boiling water
  • juice of 1/2 lemon
  • 150 g frozen peas
  • salt and black pepper, to taste
  • low-calorie cooking spray

Instructions

  • Sift the flour, sugar, salt and baking powder into a small bowl. Make a well in the centre and add the yoghurt. Using clean fingertips, gradually draw the flour into the yoghurt, mixing to form a small ball of soft dough.
  • Place the dough on a lightly floured surface and knead well for 5 minutes until you have a smooth ball. Lightly grease a small bowl with a little low-calorie cooking spray, place the ball of dough in the bowl and cover.
  • Leave in a warm place for approximately 45 minutes until the dough has increased in size very slightly and feels puffy when pressed.
  • While the dough is proving, make the keema pie filling. Spray a large frying pan with low-calorie spray and place over a medium high heat. Add the minced beef and brown for 4-5 minutes.
  • Add the onion, peppers and carrots and continue cooking for a further 3-4 minutes.
  • Add the ginger, garlic granules and curry powder. Stir well and then add the tomato puree. Pour in the beef stock and lemon juice, stir well and bring to the boil. Reduce the heat to low and allow to simmer, uncovered, for 20 minutes. The sauce should reduce and thicken. If you think it's still too runny, cook for a little longer.
  • Stir in the frozen peas, season with salt and pepper if needed, and divide the mixture between four 300ml ramekin dishes. Spread the mixture out evenly. Preheat the oven to 180°C.
  • When the naan dough has finished proving, turn the dough out onto a lightly floured surface. Roll out thinly and cut four 9cm diameter naan pie tops. You can use an upturned drinking glass with a 9cm diameter to do this if you don't have a 9cm plain pastry cutter. You will need to gather together the offcuts of dough and roll out again to make the fourth naan pie top.
  • Place the naan pie tops directly on top of the hot keema filling, sitting inside the rim of the dishes. Brush the naan pie tops with milk and sprinkle with a few sesame seeds.
  • Place the dishes on a baking tray and place in the preheated oven for 15-20 minutes, until the naan pie tops are golden, and the pies are piping hot.
  • Serve with steamed vegetables or other accompaniments of your choice.

Notes

Tip: Place the naan pie dough somewhere warm, but not too hot. An airing cupboard or warming drawer in an oven would be ideal. Don't expect the dough to increase in size to the extent that a yeast dough would. As it contains baking powder instead, it will only increase in size very slightly and should feel soft and puffy when pressed.

Air Fryer BBQ Meatloaf

This is no ordinary meatloaf! A double whammy of lip-smacking BBQ flavour, we've packed smoky-sweet seasoning into our beef mince mixture, as well as adding it to the sticky glaze that's brushed on top as a final touch. Thanks to the veggies stashed inside, this meatloaf is nice and moist. From start to finish it takes less than an hour, then it's ready to be sliced up and served with mashed potatoes and extra vegetables on the side, with gravy too if you like (but remember to adjust the calories accordingly).

Super tasty
Next time I make this, I wouldn't dice the onion as it made the loaf hard to cut. I would puree it and then sauté it with the carrot and garlic. I also used a half TSP of sugar in the glaze to add a bit of sweetness.
