Chilli and Cheese Burgers | Slimming & Weight Watchers Friendly

You don’t need fancy ingredients or hours in the kitchen to get burgers that are proper tasty. These sizzling Chilli and Cheese Burgers are made from lean beef, diced onion and jalapenos, then seasoned with warming spices and packed with melty reduced-fat Cheddar for a gooey surprise inside.

  • 1 large non-stick frying pan

Ingredients

  • 250 g 5% fat lean minced beef
  • 1/2 a small red onion peeled and finely diced
  • 1 tsp mild chilli powder
  • 1 tsp garlic granules
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 50 g reduced fat Cheddar cheese coarsely grated
  • 25 g jalapenos drained and chopped
  • salt and freshly ground black pepper
  • low-calorie cooking spray

To serve

  • 4 reduced fat burger cheese slices
  • 2 tomatoes sliced
  • 1/2 small red onion peeled and sliced
  • handful of iceberg leaves shredded
  • 4 60g wholemeal rolls

Instructions

  • Place all the burger ingredients apart from the spray in a mixing bowl and using your hands, mix, pressing and squeezing together to ensure thorough mixing.
  • Press firmly into 4 equally sized burger shapes, about 1cm thick.
  • Spray a large, non-stick frying pan with low calorie cooking spray and place over a medium to high heat. When the pan is hot, add the burgers and cook for 2-3 minutes before carefully flipping and cooking for a further 2-3 minutes.
  • Fill the rolls with the tomatoes, onions and lettuce and place a burger on top. Top with a cheese slice and enjoy!

Ramp up the heat levels by using hot chilli powder and topping with extra jalapenos.

Maple Bacon Dijon Burger

Why have a takeaway when you can fakeaway?! Inspired by a limited edition item from a popular fast food chain, these juicy beef and bacon-topped burgers are piled high with sweet, salty and spicy flavours. They’re so much tastier than the drive-through, with far fewer calories too!

Ingredients

For the patties

  • 500 g 5% fat beef mince
  • 1 tbsp Henderson's relish or Worcestershire sauce
  • 1 tsp onion granules
  • 1 tsp garlic granules or garlic powder
  • 2 tsp mustard powder
  • salt and pepper to taste

For the sauce

  • 5 tsp extra-light mayo
  • tsp Dijon mustard
  • tsp maple syrup
  • ½ tsp tomato puree

For the burgers

  • 4 bacon medallions
  • 1 medium onion, peeled and finely sliced
  • 4 gluten-free ciabattas
  • 4 slices light burger cheese
  • low-calorie cooking spray

Instructions

  • Mix all the patty ingredients together in a bowl. It’s best to mix with your hands, as this helps to bring the meat together.
  • Shape the mixture into 4 oval patties about 1cm thick and leave to rest in the fridge for 15 minutes.
  • While the patties are resting, spray your frying pan with some low-calorie cooking spray and place over a medium heat. Add the onion to the pan and cook for 5 minutes, until they begin to soften.
  • Push the onions to the edges of the pan and put your bacon medallions in. Cook them for 2 minutes on each side, or until cooked through to your liking. Transfer the bacon and onions to a plate and cover with foil while you cook the burgers.
  • Cut your buns in half. Spray with low-calorie cooking spray on the cut side and place in the frying pan to toast for 1-2 minutes. Once done, set aside.
  • Spray the frying pan with more low-calorie cooking spray and set on a medium heat. Cook the burgers for around 5 minutes each side until cooked through. If using a barbecue, spray the burgers with low-calorie cooking spray before placing on the griddle to cook.
  • Once the burgers are cooked, turn off the heat and put a slice of cheese on each burger. Place a lid or large plate over the pan and set aside while you prepare the sauce.
  • Mix all the sauce ingredients together in a small bowl until smooth.
  • On the bottom half of the bun place a burger, a bacon medallion, some onion and sauce, then add the top half of the bun. Serve with a side of your choice.

Tip: If you place a lid on the frying pan whilst cooking your burgers they will be even juicer!
Tip: You could also use a 60g wholemeal bun for this recipe if you prefer.

Ingredients

For the burgers

  • 250 g 5% fat beef mince
  • ½ tsp paprika
  • ¼ tsp garlic granules
  • ¼ tsp onion granules
  • salt and pepper, to taste
  • low-calorie cooking spray

For the burger sauce

  • 2 tbsp light mayo
  • ½ tsp ketchup
  • ½ tsp Dijon mustard
  • ½ tsp of gherkin pickle vinegar

To assemble

  • 4 bagel thins
  • 2 bacon medallions, cut into strips
  • 4 reduced fat processed cheese slices
  • 1 tomato, sliced
  • 160 g pickled gherkin slices
  • 20 g rocket

Instructions

  • Add the beef mince, garlic granules, onion granules, paprika and a little salt and pepper into a mixing bowl. Mix together until the spices are fully incorporated. Split the beef mince into 4 and shape into 4 burger patties.
  • Spray a frying pan with low-calorie cooking spray and set on a medium heat. Add the burgers and fry for 3 minutes. Flip the burgers over and add the bacon to the pan. Cook for another 3 minutes, until the burgers are cooked through. Turn off the heat and add a cheese slice to the top of each burger.
  • While the burgers are cooking, add the mayo, ketchup, Dijon mustard, and pickle vinegar to a small bowl and stir until smooth.
  • Toast the inside of the bagel thins and spread the bottom half with a little of the burger sauce. Add some gherkins and a burger patty.
  • Add some sliced tomato, rocket and some of the bacon strips to each burger. Drizzle with any extra burger sauce and add the top of the bagel. Serve with your choice of accompaniment.

This is one of our favourite burger recipes! With blackened Cajun spices and a cooling blue cheese dressing, these tasty burgers are perfect for a slimming friendly barbecue.

  • small bowl

  • burger press (useful but not essential)

Ingredients

For the patties

  • 500 g 5% fat minced beef
  • 1 small onion, peeled and finely chopped
  • 1 small pepper, any colour, approx. 100g deseeded and finely chopped
  • 20 g panko breadcrumbs
  • 1 medium egg, beaten
  • salt and black pepper, to taste
  • low calorie cooking spray

For the spice mix

  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp chilli powder
  • 1 tsp garlic granules

For the dressing

  • 75 g fat free Greek yoghurt
  • 50 g blue cheese, crumbled

To serve

  • 6 wholemeal bread rolls
  • 2 tomatoes, sliced
  • 1 medium red onion, peeled and sliced
  • 1/2 iceberg lettuce, shredded

Instructions

  • Spray a large frying pan with low calorie cooking spray and place over a medium heat. Sauté the onions and peppers for 5 minutes until softened. Place in a large mixing bowl and allow to cool.
  • Combine all of the spice mix ingredients together in a small bowl and set aside.
  • Prepare the blue cheese dressing by lightly mashing the cheese and the yoghurt together with a fork, mixing well, but keeping a chunky texture.
  • When the peppers and onions are cool, add the mince, panko breadcrumbs and half the spice mix. Add the egg and mix together throughly. At this stage, you can cook a small penny sized piece in a hot frying pan and taste. Adjust the seasoning by adding salt and black pepper to taste. Form the mixture into 6 burgers. Cover and refrigerate for 20 minutes to firm up.
  • When ready to cook, spray the burgers liberally on both sides with low calorie cooking spray and then rub in the remaining spice mix.
  • Place the frying pan on a medium to high heat and add the burgers. Cook for 4-5 minutes each side. The spice coating should blacken, but not burn. You may need to do this in 2 batches.
  • Split the rolls in half and fill with the lettuce, tomato and onion. Place a burger on top and then dollop a spoonful of the blue cheese dressing on top. Enjoy!

Tip: We used smoked paprika (also known as smoked sweet paprika). This has a mild spice rating. You can also use hot smoked paprika. This has a more fiery kick to it and you should only use this if you like your spices hot!
Tip: We used Stilton cheese, but you can use any blue cheese you prefer.
